Oven preparation:
Cut each potato into 6 pieces and place in a bowl. Toss with 2 tsp vegetable oil and seasonings. Place on baking sheet skin side down. Roast at 425°F (220°C) for 25–35 minutes until tender and/or golden brown. Tip: To shorten cooking time, microwave cut pieces for 1 minute per potato and bake for 10–12 minutes until browned.
Suggested seasonings:
Cajun, BBQ, Mexican, curry or chili.
