Potatoes have been very
misunderstood by consumers.

Having grown potatoes on our
farm for many years I appreciate
and know their history from
ground level and all that they
have to offer us as part of a
healthy life. Check out the details
within these pages and we’re
sure you’ll agree that this plain,
unassuming vegetable is a very
“hot potato”! –

Stove top preparation:

Place potatoes in a pot with water. Cover and bring to a boil, then simmer until tender (about 40 minutes). Add salt to water if desired. Mash with warm milk, butter and/or seasonings. Avoid over whipping.

Tip: To shorten cooking time, cut potatoes into quarters.

Microwave oven preparation:

Pierce each potato a few times with a fork. Microwave on high 4–5 minutes per potato. For best results, flip potatoes half way through cooking time. Mash with warm milk, butter and/or seasonings. Avoid over whipping.
